Cheesy Stuffed Pasta

This is one of my favorites! Its simple, delicious, and cheap to make! Here’s what you need:

  • pasta1 lb of hamburger
  • 1 jar of spaghetti sauce
  • 1 box of jumbo pasta shells
  • 2 eggs
  • 2 lbs of ricotta cheese (cottage cheese can substitute as a healthier alternative)
  • 8 oz of grated mozzarella cheese
  • 1/2 cup of grated parmesean
  • salt
  • pepper
  • parsley

Get the jumbo pasta shells and cook as normal. I like to add salt to my water when I cook any. This will both add flavor to your pasta and raise the boiling temperature. Once you get that going, lightly brown up a pound of hamburger meat (remember you will still be cooking this in the oven so give it room to cook). Season to taste – I might throw in a basil leaf or two.

Take a large casserole dish and spread a thin layer of spaghetti sauce along the bottom, then add your meat and spread it out along the bottom as well. Preheat the oven to 350 degrees.

Beat the eggs thoroughly, then add all your cheeses and mix together. Next add about a teaspoon of salt, 1/4 teaspoon of pepper, and a teaspoon of parsley and finish mixing in.

Before you begin stuffing the shells, make sure they are completely drained (the water collects in the “bowls” of the shells) and cooled! You can use a spoon, but you may find it easier to do it by hand (wash them first ;-) ). As you complete them, put them in the casserole dish on top of the meat. You probably will run out of filling before shells so once your dish is completely filled, layer more sauce on top. I don’t know exactly how much sauce I usually use so just use your best judgement. Don’t go light, but at the same time, your pasta shouldn’t be swimming in it. Feel free to sprinkle more cheese over the top to “purdy it up” then stick it in the oven for 30-45 minutes. I really don’t have a good indicator that its done. Another good reason to layer on some cheese!
