With the exception of Peanut Butter and Jelly Sandwiches, there’s not an easier recipe that yields such delicious results. I made this for my girlfriend, who is not a fan of shrimp in general and she loved it. The most time consuming thing was chopping the tomatoes and the rest was a breeze!
- 8 oz fettuccine
- 1 tbsp olive oil
- 1/2 tsp crushed red pepper
- 4 minced garlic cloves
- 1 lb large shrimp, peeled and deveined
- 5 chopped Roma tomatoes
- 2 tbsp sour cream
- 1 tbsp tomato paste
- 1 tsp dried basil
- 1/2 tsp salt
- Freshly grated Parmesan cheese
Cook pasta according to the package directions.
Dice tomatoes and thaw shrimp and remove tails.
Heat oil in a Dutch oven over medium-high heat. Add red pepper and garlic to pan; saute for 1 minute. Add shrimp and saute 1 minute. Stir in tomatoes, sour cream, tomato paste, and salt and bring to a boil. Reduce heat, and simmer 5 minutes. Stir in pasta; cook 1 minute or until thoroughly heated. Top each serving with the cheese and serve immediately.
