Ingredients:
- 1 lb asparagus spears
- 1 lb of spaghetti or fettuccine noodles
- 2 tbsp olive oil
- 1 lb chopped bacon
- 4 minced garlic cloves
- 2 eggs
- 1 c grated Parmesan cheese
- pepper
1. Chop asparagus into 1 inch pieces, steam or boil until tender.
2. Bring a large pot of salted water to a boil and begin cooking noodles while you prepare your sauce. Do not allow noodles to cool since their heat is needed to cook the egg sauce you are preparing.
3. While noodles are cooking, heat oil and saute bacon pieces until crisp – do not drain grease/oil. Add drained asparagus and garlic and continue to cook for 5 minutes or until noodles have finished.
4. In a separate bowl, whisk together the eggs, cheese, and 1/4 cup of water from your pasta pot.
5. Drain noodles and put back in pot then add egg mixture while noodles are still hot.
6. Add bacon/asparagus to your pot and black pepper (optional) and stir in to noodles thoroughly.
7. (Optional) Cook up some chicken or shrimp to add to pasta as well for a meatier dish!
